Roasted pepper spread

Method

  1. Start by preheating the oven to 200Β°C. Put the peppers on a baking tray and roast them for about 30 minutes, until the skin turns black or starts to come loose. This gives the peppers a deep, smoky flavour that forms the base of the pesto.
  2. Let the roasted peppers cool. Once they are cool enough, peel off the skin.
  3. In a food processor, combine the peeled peppers with the parsley, walnuts, garlic, lemon zest, lemon juice, nutritional yeast flakes and a little salt and pepper. Blend into a coarse paste.
  4. With the food processor running, slowly add olive oil until the pesto has a thick, fairly smooth consistency. Scrape down the sides now and then so everything mixes well.
  5. Taste the pesto and adjust with extra salt or lemon juice if needed. The pesto should have a nice balance of smoky, sour and salty.

Serving tips

  • This red pepper pesto is a wonderful way to add colour and flavour to all kinds of dishes.
  • Serve it as an elegant dip with drinks.
  • Keep the pesto in a closed container in the fridge, where it stays fresh for up to a week.
  • A handy tip for peeling roasted peppers easily: let them steam in a covered bowl straight after roasting. Put the warm peppers in the bowl or a bag, close it well and leave them for about 10 minutes. The steam loosens the skin, so you can easily remove it with your fingers or a small knife.
