Shakshuka with grilled vegetables

I love the combination of egg with these grilled vegetables and spiced tomato sauce. It looks impressive but is very simple to make. Great for lunch or dinner, and always a hit at the table.

Serving tips

  • Lactose-free: leave out the feta or use a lactose-free version.
  • Extra heat: stir a spoonful of harissa into the tomato sauce.
  • Vegan: leave out the eggs and add extra chickpeas.
  • Delicious with guacamole as a fresh topping or a small bowl of coconut yoghurt.

About this recipe

Take the pan out of the oven slightly early rather than late. The eggs keep cooking a little from the heat and stay nice and soft inside.
