Secretly packed with veg:

Spinach and pea sauce

This pea and spinach sauce is a creamy, fresh sauce full of flavour and healthy nutrients. It combines the mild, earthy notes of spinach with the sweet, full flavour of peas, freshened up with a dash of lime and a hint of garlic. The olive oil gives it a smooth texture and rounds off the flavours. This sauce is a versatile companion: served over pasta, used as a spread on bread or as a dip for vegetables and bread. Delicious, simple and quick to make, ideal for a light meal or a healthy side dish.

Spinach and pea sauce

Method

  1. Fill a large pan with water and bring it to the boil.
  2. Add the spinach and blanch it for about 2 minutes. The spinach should just wilt but keep its fresh green colour.
  3. Add the frozen peas to the pan with the spinach. Cook for about 2 to 3 minutes, or until the peas are heated through.
  4. Drain the spinach and peas in a colander. Then press out as much liquid as possible. You can do this by pressing the mixture against the side of the colander with a spoon. You can also let the mixture cool and then squeeze it out in a tea towel.
  5. Put the drained spinach and peas in a blender together with the lime juice, olive oil and finely chopped garlic, or use a hand blender.
  6. Blend everything into a smooth sauce. Taste and season with salt and pepper. If the sauce is too thick, add a little water to get the consistency you want.

Serving tips

  • Serve the sauce warm over your favourite pasta, as a dressing over grilled vegetables, or as a dip with some crusty bread.
  • For an extra touch, add a little grated Parmesan or some fresh herbs such as basil or mint to the sauce.
  • This sauce is also delicious as a cold spread for sandwiches, optionally with basil.
