Tzatziki

Method

  1. Grate the cucumberGrate the peeled cucumber and sprinkle with a pinch of salt. Leave for 10 minutes so the moisture is drawn out.
  2. Squeeze dryTake the grated cucumber in your hands and squeeze out as much liquid as possible. This is important, otherwise the tzatziki gets too watery.
  3. Mix everythingMix the cucumber in a bowl with the Greek yoghurt, garlic, lemon juice and dill. Stir well.
  4. SeasonAdd salt and pepper to taste. Taste and adjust: more lemon for freshness, more garlic for bite.
  5. Rest and servePut the tzatziki in the fridge for at least 15 minutes before serving, so the flavours can blend.

Serving tips

  • Lactose-free: use lactose-free Greek yoghurt or coconut yoghurt.
  • Fresh mint: add a handful of finely chopped mint alongside the dill for a fresher version.
  • Less garlic: use 1 clove instead of 2 if you prefer it subtler.
  • Serving gluten-free: with gluten-free pitta bread or rice crackers.
  • Delicious with grilled chicken or lamb, gluten-free pitta bread or rice crackers, or as a dip with raw vegetables or falafel.
